Completely Healthy Waffles

Are you limiting your carbs, allergic to eggs,
and/or looking for a healthy recipe that tastes like
a treat? If so, give our Healthy Waffles a try. It takes
an adventurous spirit to try making waffles out of
beans, and once you discover that they are
delicious, it will be fun to make them as a surprise
for guests.
This recipe requires soaked pinto beans, so if
you’re having waffles in the morning, put them to
soak before going to bed.

Ingredients

1 cup dry pinto beans
4 1/2 cups water
3 cups rolled oats
2 tablespoons oil
1 teaspoon salt
2 tablespoons sugar (optional)

1.Soak pinto beans for a minimum of three hours
by placing in a bowl with enough cold water to
cover all the beans. If you need to cut your wait
time in half, place beans in a saucepan covered
with water, bring to a boil and then remove from
the heat. Let the boiled beans soak for 1 1/2 hours.

2.Drain soaked pinto beans.

3. Combine beans, water, oats, oil, salt, and sugar in
a large mixing bowl.

4. Blend all ingredients in a food processor or
blender until light and foamy, about 30 seconds.

5. Let stand while waffle iron is heating; the batter
will thicken.

6. Grease waffle iron with cooking spray and bake
for a full 8 minutes.
